A First Look at Freshly – Chef Prepared, Gluten Free Meals Delivered to Your Door

Freshly meals are gluten free, packed with protein, free from added sugars and all natural.

You get to choose how many meals you want per week and you get to choose which meals you want. Meals come fresh, not frozen.

My first Freshly Box! I chose 6 meals, 4 Dinners and 2 Breakfasts. The box was sizable.

The box was well packed and well insulated. This is the top of the box as and shows the top ice pack. Two ice packs were included, one on the top and one on the bottom. For the 6 meal box, these are about the size of an 8 1/2 by 11 piece of paper, maybe a bit larger. The ice packs in this box were still, amazingly, frozen rock solid. These are also reusable.

I decided to start with the Jerk Chicken. That comes with brown rice and mango salsa.

Ingredients

The side (which shows up at the top of this picture) says… all natural, no refined sugars, high quality protein, gluten free, nutrient rich and freshly prepared.

30 Minute Gluten Free Mongolian Beef! – 7 Ingredients

This recipe is a favorite around our house. It’s quick, easy, relatively inexpensive and goes toe to toe with some of the best Chinese takeout. My version is also gluten free. This is a great recipe.

This recipe yields about 4 servings. Halve or double it as you desire.

Ingredients:

2 lbs sirloin steak
1 cup reduced sodium gluten free soy sauce. Make sure this is gluten free. I use San-J Reduced Salt Soy Tamari Sauce
1 teaspoon minced fresh ginger
2 tablespoons minced garlic
1/3 cup sugar – I use Sugar in The Raw – 1/3 cup of sugar yields only slight sweetness. You could use more or less, use another sweetener altogether or omit the sugar.
Oil – 2 tablespoons + 1/2 cup
6 scallions/green onions – cut greens into 1″ pieces – discard remainder
1/2 cup water

Preparations – Slice the steak into thin 1/8″-1/16″ thick slices. Make sure and cut against the grain. Mince the ginger and garlic. Cut scallions.

Sauce – Add two tablespoons of oil to a small saucepot and heat to medium high heat. Saute ginger and garlic until golden brown. Add GF Soy Sauce and water and bring to a boil. Boil for 2 to 3 minutes and set aside.

Stir fry meat – Add half cup oil to a large saute pan or wok (I use this GreenPan Wok) over medium-high heat. You want the oil hot but not smoking. Add meat and brown. After steak has browned remove from pan and drain excess liquid. Return to pan and add sauce mixture, boil dish on medium for 3 to 4 minutes. Fold in green onions. Remove from heat.

Serve with rice or gluten free noodles.

7 Simple ingredients (not counting water) and easy preparation in 30 minutes. Delicious, gluten free Chinese take out at home!

Easy variations – add broccoli for a GF broccoli beef or add a full selection of veggies for a beef broccoli stir fry.

This is based on Just a Taste’s 30 Minute Mongolian Beef. I made some adjustments to make it gluten free, along with a few other tweaks… thinner meat, reduced the sugar and omitted the corn starch. You could add that back if you like a thicker sauce.

I picked this up a while back, mainly to do panini type sandwiches (of course with GF bread). It’s becoming one of my new favorite kitchen tools. It works great for sandwiches and a lot more. I just made some great eggs and bacon with this thing. For some reason I’ve always had a problem cooking a good egg. The griddler provides a nice even temperature and an open (no pan sides) cooking surface to easily flip things, like pancakes (of course GF) and eggs.

Since I have Celiac Disease [About Me], I can’t eat fried foods at most restaurants because of cross-contamination concerns. Since I would still like to enjoy the occasional fried thing, I picked up a deep fryer.

After shopping around, comparing reviews, cost and features I settled on the T-fal FR8000 EZ Clean Deep Fryer.

I really like it because of it’s large capacity and basket and how easy it makes clean up. A flip of the switch drains and filters oil (of course after you’ve let it cool) into a sealed plastic container for storage. Excluding the easily removable heating unit, everything else can go into the dishwasher for cleaning.

It has… a 2.65 lb food capacity, a 3.5 liter oil capacity and includes a two position basket (1 position for frying and one for draining). It has an immersed heating element and (of course) an adjustable thermostat. 1,700 Watt heating element.
